Last Second Gumbo

With Hurricane Isaac heading for New Orleans, Eric and I decided to pack our stuff and haul out for a children-filled hurrication in Ocean Springs, MS. But before we left, we decided to throw together a make shift gumbo, which was actually REALLY REALLY good! I was shocked at how good it was so I feel compelled to share our short cut gumbo recipe with y’all! 

Here is the recipe for our make shift gumbo. Enjoy!

Ingredients:

  • 1 Can of  Blue Runner Gumbo Base
  • 1 Can of Crushed Tomatoes
  • 2 Celery Stalks
  • 1 Yellow Onion
  • 1 Roma Tomato
  • 4 Raw Chicken Breasts
  • 1 Package of Andouille or Smoked Sausage

Step 1: Cut and sauté the the onion and celery until  soft.

Step 2: Boil Sausage in a separate pot until cooked through.

Step 3: Add raw chicken to gumbo pot – cook until brown.

Step 4: Add sausage, cut roma tomato, 1 can of crushed tomatoes, and 1 can of gumbo base.

Step 5: Season with salt, pepper, cayenne, garlic, and onion powder.

Step 6: Serve over rice.
